Honey Lemon Chicken Thighs
These honey lemon chicken thighs are full of flavour and super easy to make. I love cooking, but life never seems to get any less full, does it? The joy of marinading is that the flavour soaks in while you’re busy doing other things. With just a few ingredients you can greate some really bold flavours – and with very little effort. Yes, I could have added garlic or chilli to this – and I won’t be offended if you do – but the zing of the lemon and the sweetness of the honey are really all that’s needed. If you use frozen chicken for convenience you can even marinade it while it defrosts- that’s what I did here. Just remember to keep your chicken at a safe temperature.
Keeping the Chicken Moist
The beauty of a marinade is that the chicken stays so moist! This is perfect for paranoid people like me. I always want to be really sure meat is cooked through – it’s one reason I love slow cooking. If your partner is running late, you’re busy or you’re feeling paranoid, turn the chicken one more time in the sauce and turn it down a bit – your honey lemon chicken thighs will be fine. Honey Lemon Chicken Thighs are So Versatile
Another reason I love this dish is that it’s so versatile. We were tired after a busy day looking round primary schools (eek, I can’t believe my son will be at school next year!). We just piled them on top of vegetable rice and topped with the juices and some chopped coriander (cilantro). If you prefered, you could use them as a centrepiece for Sunday dinner and serve them with roast vegetables, stuffing and gravy. And you could even give them an oriental twist with some noodles and a lemony stir fry. They’re easy enough for after a busy day at work, but tasty enough to impress.

These low prep full flavour chicken thighs are economical and require very little time in the kitchen. Perrfect for any occasion!
- 3 tbsp olive oil 75ml or 3/4 of a cup
- Juice of 2 lemons
- 2 tbsp runny/clear honey
- 4 chicken thighs
Make the marinade by mixing the olive oil, lemon juice and honey thoroughly.
Place the chicken thighs in an oven proof dish and pour the marinade over. Marinade for several hours in the fridge.
Preheat oven to gas mark 7,
Cook the chicken thighs for 45 minutes, basting and turning at least once during cooking.
