Hot Autumn Main Meal Bruschetta

I know bruschetta is usually a cold snack – but this reworking had all the fresh, crunchy spirit of the original.  I love seasonal food, and Autumn is my favourite time of year – the autumn festivals, the nights drawing in and the changing colours of nature.  With a fairly random assortment of seasonal produce to use, I created an autumn feast.

I’ve linked to the recipes below. I didn’t use exact quantities of anything, but this sort of cooking is forgiving. Pick one or two for a light supper or lunch – all four for a feast. Do let me know if you have your own autumnal topping ideas!
