A zingy Mexican inspired ground meat dish that is mild enough for the whole family. Please note, calories are calculated with lean beef mince. Approx 790 kcals per serving for 20% fat beef mince.

Ingredients
  • 1 kg mince/ground meat 2.2lb
  • 2 red peppers
  • 2 onions
  • 2 cans chopped tomatoes 400g/14oz
  • 1 bunch coriander (cilantro)
  • 2 limes
Instructions
  1. Brown the mince/ground meat and drain off excess fat.

  2. While it is browning peel the onions. Seed the peppers. Finely chop both. When the meat has been browned stir them in.

  3. Open the cans of tomatoes and add them in, mixing well.

  4. While this is simmering, zest the limes directly into the pan. Juice them, and add the juice, watching for any lime pips.
  5. Rinse and roughly chop the coriander/cilantro and stir it in, saving a little for garnish if you wish.

  6. Simmer until the peppers are soft.
