  • 1 large aubergine
  • 1 400g/16oz can of chopped tomatoes
  • 1 tsp sugar
  • 2 tsp sumac
  • 2 pinches hot chilli powder
  1. Chop your aubergine into chunks

  2. Place the aubergine chunks in a pan along with the tin of tomatoes, sugar and spices.

  3. Cook on a medium heat for 15-20 minutes, stirring occasionally.
